No onions or peppers huh. Do you just not like them or do you hate the flavors too? How long has it been since you've tried stuff with them in it? How have you eaten them (like how have them been prepared) all that makes a huge difference. You're so limiting yourself on some awesome flavors! Even different onions have different flavors.
However, you could try loaded baked potato soup, broccoli cheese soup and different veggie soups just don't include the onions and peppers.
Here is one of my favorites:
Slow cooked veggie barley soup- makes 8 servings
3/4 quick cooking barley
4 garlic cloves
6 oz white mushrooms- quartered
2 carrots - chopped
1 large zucchini (about 12oz) chopped 1/4 inch cubes
1 medium yellow squash (about 8 oz) cut into 1/4 inch cubes
1 celery stalk - chopped
1 onion- chopped (you can either use onion powder instead or just take it completely out)
1 small fennel bulb, core removed and chopped
1 cup frozen lima beans (I used green beans instead)
1 can (14.5 oz) Italian seasoned diced tomatoes (I couldn't find these so I just used regular ones and through in some Italian seasoning)
1 tsp dried basil
4 cups fat free low sodium vegetable or chicken broth. (I used 2 cups of each.)
In a slow cooker (highly recommend a liner) place the barley, garlic, mushrooms, carrots, zucchini, squash, celery, onion, fennel, lima beans, tomatoes, and basil. Pour in the broth; cover and cook on low 8-10 hours.
1 serving- 1.5cups: 134 calories, 1gfat, 0g sat fat, 0 g trans fat, 0mg Chol, 588 mg sodium, 29 g Carbs, 6 g fiber, 5 g protein, 87 mg calcium.
All the other ones I like really need the onion to be good.
